Matcha & tea

Matcha milled below 35 °C, to a particle under 10 µm.

Matcha loses its colour to heat and oxygen during milling. The fix is not a cold room — it is a jacketed, water-cooled milling chamber on a sealed material path, so the temperature stays down inside the machine.

The technical difference

The problem is the mill, so the control is in the mill.

Some producers build an entire low-temperature workshop to keep the powder from oxidising. That is one answer. Ours is to take the heat and the air out of the milling step itself, which keeps the colour without the cost of climate-controlling a whole hall.

  • Horizontal ball mill with a jacketed milling chamber, water-cooled and with dedicated liquid cooling
  • Milling temperature held at or below 35 °C for the whole pass, not just on entry
  • Sealed material path from the silo through to the milling chamber, blocking oxygen exposure
  • Ball mill combined with a jet mill to reach a particle size of 10 µm or finer, for a fine powder with no grit
  • Steam fixation with tight control of temperature and dwell time, so the leaf is fixed quickly rather than stewed
  • No low-temperature workshop needed — the control sits inside the process equipment

Grades

From everyday blending grade to ceremonial.

Grades are defined by origin, cultivar and harvest, not by marketing label. The table below is the reference we quote from; the right grade depends on whether the matcha is being drunk on its own or blended into a drink or a bake.

Note on the EU / JP spec rows: these are the grades we recommend when the destination market applies stricter pesticide-residue limits than the Chinese national standard. Confirm the applicable limit list for your market before fixing the grade — it changes the sourcing window and the price.

Product forms

Powder, capsule cup, or in the cap.

Matcha sells in several materially different formats, and the format drives the filling equipment, the dissolution behaviour and the shelf-life claim.

Bulk matcha powder

Food-service and ingredient supply in foil-lined 10 kg cartons or 1 kg packs, for beverage manufacturers, bakeries and ice-cream producers.

Sachets, pouches and jars

Stick and sachet filling for single-serve matcha lattes, foil pouches for 30 g to 240 g retail packs, and sealed jars for ceremonial grade.

Matcha bottle cap format
Bottle cap

Matcha in the bottle cap

Matcha dosed into a screw-on cap: the consumer twists it and the powder drops into the water or milk below. Powder and liquid stay separate until the moment of drinking, so no preservative is needed and the drink can be made in an ordinary bottle.

Process

Shade, steam, mill, seal.

The route is short, which is exactly why each step has to be right. There is no later stage that can correct a mistake made at fixation or milling.

  • Steam fixation controls temperature and dwell time to lock colour and hold the functional compounds
  • A stated target of 16 minutes from tea garden intake to start of processing
  • Graded sieving after milling so the particle-size distribution is sold as specified, not as an average
  • Aseptic packing of the finished powder, with the pack format matched to shelf life

Applications

Where the powder is used.

Matcha is sold on colour, and colour survives or fails depending on how the finished product is stored and used — so we formulate against the end application.

  • Drinking matcha and matcha latte bases for retail and food service
  • Ready-to-drink and bottle-cap formats where powder and liquid must stay separate until use
  • Bakery and pastry — colour retention through bake is grade-dependent and specified per product
  • Ice cream, frozen dessert and confectionery applications
  • Matcha blends with strawberry, blueberry and pistachio flavour systems
  • Roasted green tea (hojicha) and blended tea bags from the same tea lines
